Spicy Peanut Butter Sauce
2 large cloves of garlic (Schaner Farms)
3 inch piece of fresh ginger, peeled and cut into pieces
4 T organic crunchy peanut butter, or more to taste
1 T toasted sesame oil
1 T chili oil
1 T rice vinegar
3/8 c low salt soy sauce
Combine all ingredients in a food processor and pulse until well mixed, but peanuts still visible.
Cook 1 lb noodles (either soba or Barilla Linguini Fini) as directed on package. Drain. Toss well with Peanut Butter Sauce.
1 red pepper (Blue Heron, Kawano, Rays Subtropical - in season)
1/2 lb snow peas (Rays Subtropical)
1 bunch green onions (Valdivia, Schaner)
Julienne the above vegetables and quickly stir fry in a splash of sesame oil and chili oil on high heat. Serve on noodles.
